Veganuary by The Lux Collective
With the "Keen on Green" concept at the pulse of time in all hotels
LUX* Resorts & Hotels, SALT and Tamassa are the right places for people who follow a vegan or vegetarian diet or at least want to give up meat and the like for a while while on vacation. In future, there will also be a wide range of alternatives for them apart from salad.
Veganuary in full swing
More and more people are making it their resolution to avoid animal ingredients, at least for the month of January. The #veganuary on all popular social media platforms is often not so easy to keep on vacation. The temptations are simply too great. The exact opposite is true of the dishes created by Corporate Chef Dave Minten and the chefs at the resorts. "Every single dish is prepared in such a way that even someone who is not vegetarian or vegan will want to try the plant-based dish. These ingredient-based dishes require creativity and modern cuisine with vegetables taking center stage," says Chef Minten.
All menus are bursting with nutrients. Where possible, roasting and frying are completely avoided. Saturated oils are replaced with healthy alternatives. For example, coconut oil, hemp oil and virgin olive oil are used. Even the cooking methods are designed to preserve nutrients. Steaming, baking and grilling as well as slow cooking at a low temperature are the methods of choice. Where possible, ingredients are served raw. Refined oils and unsustainable ingredients are banned; local and regional produce ends up in the cooking pots.
Kids go Green
The "Keen on Green" program is not only aimed at adults who want to eat healthier. In addition to the classic dishes, there are also children's menus on the menu. This means that even the youngest guests can enjoy balanced and nutritious meals. They learn a natural approach to plant-based cuisine.
"We take our young guests very seriously. We know that the future belongs to them and that we have to take care of our planet. Our chefs had a lot of fun creating children's menus that help our little guests make healthier choices."
