In October 2025, Michelin-starred chef Dave Pynt, known for his expertise in wood fire and slow roasting, returns to the Waldorf Astoria Maldives Ithaafushi to lead the kitchen at The Ledge. His specialty is cooking over specially designed, energy-efficient Jarrah wood-fired grills in a specially constructed four-ton oven. Guests can expect sophisticated meals that can be enjoyed as casual poolside lunches during the day and exclusive wood-fired specialties in the evening. In October, the resort will also present an extraordinary celebration of sake culture at Zuma Maldives, the contemporary Japanese restaurant. In cooperation with a Japan Sake Brewers Association honored Sake Samurai, a global ambassador of the art of sake, exclusive sake experiences will be offered. These include rare and hard-to-get sake varieties such as the seven percent polished Zankyo Super 7 and the barely available Zuma ONE (one percent, there are only nine bottles worldwide).
Accompanying the sake celebration will be a series of themed events, including lively Tokyo-style Enkai Night brunches with izakaya dishes, an elegant Ginza dinner with robatayaki and sake pairings, and an Osaka night combining traditional Japanese snacks and sushi with sake tastings. The Waldorf Astoria Maldives Ithaafushi thus offers a remarkable culinary variety for discerning connoisseurs, from international gourmet concepts to Japanese specialties and creative interpretations of tropical ingredients.
