ION at Sea: Private Chef’s Table on a Yacht

The Sea as a Dining Room: Malta’s first floating Chef’s Table brings the two-star cuisine of ION Harbour by Simon Rogan to a Riva 44 yacht.

      
With Valletta’s sandstone skyline as a backdrop and the Mediterranean stretching out all around—this is how to dine: As an extension of his two-Michelin-starred restaurant ION Harbour at Iniala Valletta, Simon Rogan is bringing his farm-to-table philosophy to a Riva 44 yacht, aiming to turn a cruise along Malta’s coastline into a culinary retreat.

The concept: just one reservation per evening, for a small group of two to five guests. The yacht thus serves as a floating Chef’s Table, where each course is finished right in front of the guests, while the crew explains the stories behind the ingredients and techniques. Two experiences are offered: “The Dinner Cruise” departs from 7:30 p.m. to 10:30 p.m., sailing out of the Grand Harbour at sunset before coming to rest under a star-studded sky as the yacht anchors for dinner. “The Ultimate Cruise” begins earlier: From 2:30 p.m. to 10:30 p.m., it combines hours cruising along the south coast with refreshing swimming breaks in the clear water and dinner at sea.





Simon Rogan and his team have been honing their craft in the compact onboard galley for years; together with ION Harbour’s Executive Chef, Oli Marlow, as well as Chef Charlie Wilson and Restaurant Manager Arsen Brahaj, they have created a tasting menu that unites the finest produce from land and sea.

Amberjack marinated in juniper is presented with beets from Joseph’s Farm, wild fennel, and quince vinegar, and is paired with ION Harbour’s signature truffle pudding, glazed with carob molasses and aged Maltese Pecorino. The menu is rounded out by raw Rossi shrimp from Malta’s south coast served with sea jelly, fig leaves, buttermilk, and smoked pike roe, as well as guinea fowl stuffed with truffles and served with snowball cauliflower and a sauce accented with lemon thyme. The wine pairings range from the Classic Pairing to the Prestige Pairing with champagne, Grand Cru Burgundies, and great Bordeaux vintages; a non-alcoholic pairing remains a viable alternative. There is a deliberate philosophy behind the fact that nearly all ingredients are drawn from the Maltese archipelago, with only a small percentage arriving from nearby Sicily: The ION Harbour team collaborates with spearfishermen, a third-generation salt farmer on Gozo, and a Sustainability Manager who organizes foraging and discovery excursions in the natural landscape, thereby laying the foundation for the continuously evolving menu.
