FORESTIS

A place of power with a turbulent history

The FORESTIS is a hideaway that captivates guests with its bold architecture, deep connection to the forest, and exquisite culinary delights.
Located at an altitude of 1,800 meters in Palmschoß, above the South Tyrolean cathedral city of Brixen and overlooking the Dolomites, FORESTIS has been a destination since 2020—a hideaway featuring 62 suites and a 2,000-square-meter spa. Its history, however, begins much earlier: in 1912, the Austro-Hungarian Empire was searching for a location for a sanatorium. The pure mountain air, the mild climate, and the light Plose spring water made the Plose mountain the ideal site. Otto Wagner designed the buildings, but the war prevented his plans from being realized. Instead, only a house made of wood and natural stone and a slightly more distant Alpine Art Nouveau villa were built.

Nature, tranquility, and time become the true luxury

To this day, Palmschoß has remained untouched by mass tourism. In 2000, South Tyrolean hotelier Alois Hinteregger stumbled upon the overgrown building by chance, recognized the special energy of the place, and opened it as a hotel in 2010. A decade later, his son Stefan and his wife Teresa wrote the next chapter: they opened FORESTIS—a hideaway that translates the unspoiled nature of the Plose Mountain, the pure air, the unique climate, and the legendary spring water into a contemporary retreat. The name is derived from the Italian “Foresta” (forest) and reflects the philosophy: a place where nature, tranquility, and time become the true luxury.

A keen sense of history

South Tyrolean architect Armin Sader and the FORESTIS interior design team demonstrated courage by reinterpreting the region’s traditional building style and creating a hideaway that is fully anchored in nature. The historic wing of the building, constructed from local materials, serves as a tranquil starting point. Next to it, three sculptural towers rise toward the sky—inspired by tree trunks. Inside, the understated architecture opens up to spacious rooms that offer unobstructed views of the Dolomites. From all suites in the historic building and the suites and penthouses in the three towers, guests can see the imposing mountain ranges; the terraced restaurant below the historic building allows every guest an unobstructed view of nature and, in the evening, the spectacular sunsets in the Dolomites. In the summer, guests enjoy the crisp air and panoramic views on a spacious lawn in front of the complex. For years, the old spa doctor’s villa lay dormant until Teresa and Stefan decided in 2023 to bring it back to life. With a keen sense of history and Alpine Art Nouveau, they had the house restored; together with architect Armin Sader and based on historical plans from Vienna, the villa was carefully restored to its original condition under strict historic preservation regulations—a piece of Alpine architectural history. Today, the FORESTIS Villa is available for exclusive rental.

Inspiration for Spa and Culinary Experiences

Inspired by the Celtic connection to the forest, the spa concept is based on four native trees—mountain pine, spruce, larch, and Swiss stone pine. Their natural active ingredients and vibrations make the forest the heart of relaxation. The cuisine at FORESTIS bears the signature of Executive Chef Roland Lamprecht, who draws his “forest and nature cuisine” from childhood memories. He uses mushrooms, berries, herbs—all from the forest—products from local farmers, and heirloom vegetables grown specifically for FORESTIS, blending Mediterranean lightness with Alpine flavors—recreated anew each day and deeply rooted in his South Tyrolean homeland. 2025 marked the beginning of a new chapter for Roland Lamprecht: With YERA, his forest cuisine is taken to the next level. To fully savor the flavors and ingredients of the forest, Teresa and Stefan Hinteregger have created a new restaurant; it is located in the forest, built into the mountain—a tribute to traditional craftsmanship and the comfort of caves. Lamprecht and his team use traditional techniques: they ferment, salt, dry, and smoke, working with low temperatures and infusions. At YERA, cooking takes place on and over an open fire in front of the guests.
