The redesigned gourmet restaurant HILMAR blends harmoniously into the historic 16th century walls with a stylish lightness. In its bright design, HILMAR picks up on the themes of nature and sustainability and visually combines the new style of cuisine with the castle park, which is widely known for its special botany. The restaurant's new name refers to Hilmar von Münchhausen, who laid the foundation stone for the imposing Weser Renaissance building in Schwöbber in 1570.
Down-to-earth delicacies from Germany and around the world are served in the cozy castle cellar and in summer you can enjoy the restaurant's sophisticated cuisine on the spacious park terrace with a view of the historic landscaped garden. The evening ends in the Rittersaal or at the stylish SCHWÖBBAR.
