: The hosts, Christa, Karl, and Marc Traubel, together with Executive Chef Kristian Knölke, extend their sustainable concept to the dining experience, blending Allgäu tradition with modern culinary styles from around the world. Since the beginning of 2022, they’ve placed even greater emphasis on origin and quality, as the hotel has been a Bioland partner with a bronze certification ever since. As a result, nearly 60 percent of the ingredients used by Chef Kristian Knölke in his dishes are now sourced from regional, certified-organic farms. With this step, HUBERTUS—which has always relied on local products—further underscores its sustainable culinary philosophy of Holistic Food. In the spirit of the Italian Slow Food® movement, this approach emphasizes not only varied, healthy dishes and gentle preparation without additives but, above all, seasonal products from the region. For example, the Gunzesried mountain fish farm supplies freshly caught mountain char; the award-winning 12-month-aged mountain cheese comes from Alpe Spicherhalde; and organic milk and meat come from the Theresienhof, located just two and a half kilometers away—the first organic-certified farm in Balderschwang.
