Villa Keller by Erasmus

With the opening of Villa Keller by Erasmus, Saarburg gains a new architectural and culinary highlight.

This boutique hotel on the Saar River seamlessly blends the historic character of a listed townhouse dating back to 1801 with contemporary design and fine dining—a combination that appeals to design enthusiasts and culinary travelers alike. The project was conceived by the Boesen family, who have been synonymous with genuine hospitality and sophisticated cuisine in the Saar-Hunsrück region for three decades. With Villa Keller, the family is expanding its Erasmus Collection portfolio to include a property that brings history to life while offering a modern interpretation.

Committed

to tradition

Once the residence of the Keller family and later a tannery and winery, the villa was carefully renovated in close consultation with historic preservation authorities. Britta Tibo from Trier is responsible for the architectural redesign, reimagining the house’s classical character with clean lines, high-quality materials, and a harmonious color scheme.
The eleven individually designed rooms and suites combine historical elements such as stucco ceilings and original parquet floors with elegant interiors featuring brands like Dôme Deco, Polspotten, Paul Lindberg, and Musterring. Custom-made furniture from the traditional Saarburg-based carpentry shop Meier gives each room its own distinctive character. Generous windows offer views of the Saar River and the castle across the way, while design accents such as the delicate Kriskadecor chain curtain above the Chef’s Table in the Dopamin Fine Dining restaurant add striking touches.

Indulgence has its place

The establishment also makes its mark in the culinary realm. At Dopamin Fine Dining, Executive Chef Axel Boesen has been presenting a menu concept since September that combines regional products from the Saar-Hunsrück region with Japanese and Nordic influences. His cuisine emphasizes lightness, precision, and surprising flavor combinations—a modern interpretation of fine dining that deliberately breaks new ground. The culinary offerings are complemented by Keller’s Wirtshaus, where down-to-earth, regionally rooted dishes are presented with a contemporary twist.
The villa’s location could hardly be more idyllic: right on the banks of the Saar, just a short walk from the medieval Saarburg Castle. This makes it an ideal starting point for hikes and bike rides in the Saar-Hunsrück Nature Park—or for strolling through the charming half-timbered streets of the old town.
