A new culinary breeze is blowing through the Viktualienmarkt: Marius Pieper will be the new executive chef at the LOUIS Hotel Munich starting May 1, 2026. With his clean, minimalist, yet expressive cuisine, he will further develop and reinterpret the hotel’s gastronomic direction. Most recently, the 30-year-old was in charge of the kitchen at Severin*s – The Alpine Retreat in Lech am Arlberg, where he impressed with a modern take on Alpine fine dining. His signature style: precision, harmony, and uncompromising product quality.
In addition to the restaurant “The LOUIS Grillroom,” the legendary Viktualienmarkt brunch on weekends and holidays, “The LOUIS Rooftop” with panoramic views of the Old Town, and the stylish “LOUIS Sparkling Bar” all shape the overall experience of the establishment and underscore its position as a versatile destination for culinary enjoyment in the heart of Munich.
LOUIS: All About the Suites
At LOUIS, the philosophy is all about feeling at ease in a spacious setting. With a stylish eye, a skilled hand, and a great deal of finesse, 72 rooms have been created that convey the special LOUIS lifestyle. Handcrafted furniture made from natural materials in innovative designs, Italian fabrics, and elegant tiles reminiscent of the Paris Metro guarantee a cosmopolitan atmosphere without feeling artificial or out of place. The two small dormer balconies in the LOUIS Suite, offering a view of the beautiful steeple of “Alter Peter,” are just as captivating as the view of the Viktualienmarkt from the Market View Deluxe room.
