Careful and mindful handling of centuries-old heritage
The over 600-year-old Laubenhaus in the former cathedral city of Brixen in South Tyrol opened in July 2023 under the name "Fink" as a nine-suite hotel including a Lauben restaurant with a so-called "monastery kitchen" and a small spa. In recent months, hosts Petra Hinteregger Fink and Florian Fink have redesigned the inn, which has been family-run for over 125 years, under the direction of ASAGGIO architects from Brixen: The uncovering of the historic house and the respectful renovation of all rooms, including bay windows and frescoes, created space to bring out the original character of the building again. The clear and purist furnishings of the nine suites, the restaurant and the spa with pool and relaxation room emphasize the monastic atmosphere. The care with which the townhouse with its old wooden doors, round arches and frescoes has been brought back to life also reflects the attitude of the new "Fink": Petra and Florian Fink are taking the step of running a hotel alongside their restaurant business for the first time. Both have many years of experience and a great deal of passion.
With his special kitchen concept, Florian Fink incorporates the centuries-old knowledge of monks and nuns from nearby monasteries into his dishes. The focus is on simplicity in preparation, the selection of ingredients, which consists mainly of local vegetables and herbs, and the knowledge passed down through generations that our diet influences our health. Petra and Florian's philosophy is based on the conviction that thinking and acting sustainably is the prerequisite for quality that can withstand the challenges of the future.
The price per night including breakfast for two people starts at 300.00 euros per suite.
