Leap into French-speaking Switzerland
The vegetarian and vegan cuisine at tibits is enjoying great popularity. 18 years after opening the first tibits in Zurich Seefeld, the tibits founders are now responding to a customer request from many guests in French-speaking Switzerland and opening their first restaurant in the French-speaking part of the country, in Lausanne.
The perfect location was found - the former "Buffet de la Gare" in the middle of the train station. "The spacious, high-ceilinged hall with its stucco has an enormous amount of charm and history. We felt it was our duty to integrate our concept and interior design stylishly into the historic building and adapt it accordingly," says tibits co-founder Reto Frei. For example, the fresco paintings and paneling in all rooms have been restored and will be retained. Selected wallpapers, colorful fabrics and furniture specially made for tibits ensure that the typical tibits atmosphere is created. True to the tibits philosophy, guests are spoiled with a rich culinary buffet of over 40 vegetarian and vegan dishes from all over the world, which are freshly prepared every day. The buffet also includes a few specialties from French-speaking Switzerland - each refined with a tibits twist or two. For example, Saitan Bourguignon, Tofu au Vin, Käsewähe and Zwiebelwähe. Two soups are also prepared according to a traditional recipe from French-speaking Switzerland: the Fribourg white wine soup and the cheese soup. Another highlight: the tibits interpretation of Papet Vaudois, a traditional stew from Vaud cuisine. The soy-based vegan saucisson is served with a seasonal leek and potato stew. "Our version of Papet Vaudois is to be understood with a wink. Inspired by the French-speaking Swiss classic, we have created a vegan version that consists of purely plant-based ingredients and is intended to remind diners of the original in terms of appearance and taste," explains recipe developer Patrizia Catalano. Malakoff, deep-fried cheese slices, are also a brand new addition to the tibits buffet.
