Oona Caviar - Genuine Swiss Alpine Caviar

In 2011, Tropenhaus Frutigen opened a new chapter in the history of Swiss delicacies: the finest caviar from Siberian sturgeon.

       

With a great deal of passion, patience and care, something unique has been created - the "Genuine Swiss Alpine Caviar" from the Kandertal valley. In keeping with the philosophy of the production site, the Tropenhaus Frutigen, and based on the use of Lötschberg mountain spring water, the first Swiss caviar is natural, sustainable and produced using the finest craftsmanship.

Oona caviar is the first and only Swiss caviar from sturgeon that have grown up in Swiss mountain spring water. Tropenhaus Frutigen rears two sturgeon species for caviar and fish fillet production and can therefore offer two different, high-quality caviar varieties. The Oona Caviar (N°101, 102, 103) from Siberian sturgeon (acipenser baerii) and the Oona Caviar Osietra Carat from Russian sturgeon (acipenser gueldenstadtii). The first Swiss caviar from Russian sturgeon, the latest product, comes from fish that have had 9-10 years to develop and grow in warm mountain water.

The sturgeon are reared in the fish farm at Tropenhaus Frutigen in the Kandertal valley and swim in pure, naturally warm mountain water. Optimum, state-of-the-art husbandry conditions and sustainability are the top priorities here. The exclusively manual processing takes place on site and guarantees a rapid process from fish to caviar tin.

The aim is to produce honest, authentic caviar that has been stored for as short a time as possible, without any additives or preservatives. As one of the few caviar producers that do not use borax as an additive, we produce caviar with a delicate skin and present grain, a pleasantly soft consistency and a fine melt. Only in this way can its nutty aroma and the subtle hint of young moss develop to their full potential. Oona caviar is refined using only pure salt, because sustainability, purity and the accentuation of the finest flavor nuances are paramount. Oona caviar is distinguished by its unmistakable character.

Tropenhaus Frutigen is a pioneer in the field of land-based fish farming. At the center of the facility is a professional production facility for sturgeon, perch, zander and grayling. The way in which the caviar is harvested and processed is crucial to its quality. The processing of Oona caviar is therefore characterized by manual work. The individual steps of caviar extraction and processing are carried out by professionals and in accordance with the highest quality and hygiene requirements.
