New Wagyu temple opens

Mediterranean-Japanese fusion in South Tyrol

       

The gastronomic veteran Otto Mattivi recently opened the Aomi Wagyu Restaurant in Burgstall near Merano: look forward to a restaurant within a restaurant and the newest member of the Hidalgo Collection.

Almost forty years ago, restaurateur Mattivi fell in love with Argentinian beef and dedicated the Spanish-sounding name of his first restaurant to it: Hidalgo. Almost four decades later and many more types of meat later, the visionary opened his specialty restaurant Aomi. The focus is on Wagyu, Japanese beef, the most tender and precious meat in the world.

The name Aomi is made up of the Japanese "Ao" for new, young, but also blue and "mi" for taste. Mediterranean and Japanese elements come together here, both in the dishes and in the interior. Visitors will find refined Italian-style Wagyu delicacies as well as dishes and products from the Mediterranean region and different interpretations of Wagyu beef. These fuse with Japanese flavors such as yuzu peel, ponzu, Tonburi Acker caviar, sudachi puree and wasabi cream. Guests can choose between two menus called tsuki and taiyo, and Aomi also offers a variety of à la carte dishes. Tsuki costs 93 euros per person, taiyo is 110 euros. About the Hidalgo Collection

In 1980, Otto Mattivi founded the Hidalgo Grill Restaurant in Burgstall near Merano, South Tyrol, thus laying the foundation for the Hidalgo Collection. This was followed in 2014 by the Hidalgo Suites, which offer vacationers an ideal starting point for excursions to the surrounding towns and valleys in a spacious and pure ambience. The Aomi Wagyu Restaurant, a specialty restaurant that exclusively uses Wagyu meat from Japan and South Tyrol, has been added to the collection. The latest addition to the Hidalgo Collection is the Arua Private Spa Villas in Dorf Tirol. These include six private residential units with exclusive service and fantastic panoramic views over Merano.
