Oona - Genuine Swiss Alpine caviar
The Tropenhaus Frutigen is located at the foot of the Bernese Alps and offers an innovative energy concept to the power of three: mountain water, fish farming and the tropical garden. A combination that is unique in the world. The Tropenhaus Frutigen is exemplary in its use of closed, resource-saving material cycles and renewable energies. In this special environment, the Siberian sturgeon is bred, from which - under the name Oona - Genuine Swiss Alpine Caviar originates. How did the idea of breeding sturgeon and producing caviar in Frutigen come about?
When the NRLA base tunnel was built, the question arose: what to do with the 70 liters of crystal-clear water that flows unhindered out of the tunnel on the north side near Frutigen every second? Instead of cooling the tunnel water at great expense and wasting energy, the heat can be used sensibly and sustainably in the Tropenhaus Frutigen. The water contributes to the purity and expressive taste. No preservatives or artificial flavorings are used. This year, Tropenhaus Frutigen has kicked off the caviar season with the launch of the 4th edition of CaviArt.
The exclusively manual processing takes place on site and guarantees a rapid process from fish to tin. Oona caviar is refined using only pure salt, as sustainability, purity and the accentuation of the finest flavor nuances are paramount. Oona caviar is distinguished by its unmistakable character.
Oona - Genuine Swiss Alpine Caviar is available in various selections:
N°101 - limité
The 101 rating means caviar with a grain size of at least 2.6 millimetres, an intense taste, delicate skin and the highest quality.
N°102 - jeune
This quality promises pure freshness, as Tropenhaus Frutigen is the only caviar producer in Switzerland that can guarantee delivery within a few days of harvesting. The loose, pearly and minimally salted roe is only available to pre-order.
N°103 - traditionnel
: The purity of this caviar really comes into its own here. With a maximum salt content of 3.5 percent, it is lightly salted and develops its nutty, characterful flavor perfectly. This caviar is also characterized by its homogeneous colouring and round grain.
Oona Caviar Millésime
: An intense taste and a shiny black color characterize this caviar. After a few months of maturing, the full flavour develops until it is finally pasteurized in the jar. This caviar is ideal in combination with dishes, for example to round off a beef tartare. Pasteurization gives it a longer shelf life and a crunchier grain.
